How many restaurants do you know where can you get healthy handmade pasta daily? Where sauces are made fresh for each dish? At Folco's, Chef Mario and family work hard to make your meal a memorable experience.

The Folco's story

Beginning in Italy, Mario attended the Masters program at the world renown I.C.I.F. culinary institute - refining his skills and preparing the best of Italian dishes. Apprenticed at several restaurants in Italy he studied the art and techniques of traditional Italian cuisine.

Back in Canada, he has brought a little bit of Italy to you. Opened in September 2002, Folco's is situated in one of Markham's century-old heritage buildings and designed in the style of a Tuscan restaurant. The food is fashioned after the cuisine of the Piemonte and Bologna regions. Folco's even boasts a variety of select Italian wines to complement its variety of veal, chicken, seafood, beef, and vegetarian dishes. Mixed with a passion for pasta, Folco's is the restaurant you want when you are looking for authentic comfort food in a casual environment.

Mario's motto: "La cucina povera"

Food is made simple, healthy, and fresh. Guided by the rule "La cucina povera" - all dishes are prepared in a simple, yet mouthwatering manner - capturing the true essence of Italian cuisine. Folco's signature handmade pasta is prepared daily on the premises by Mario's daughter, Deana. You will taste the subtle differences in each hand-crafted pasta. For those focused on healthy eating, whole wheat, gluten-free, and spelt pasta are also available.

Folco's and the community

In March 2004, Folco's was one of only six Canadian establishments selected by the Italian Trade Commission (ITC) to feature the food and wine of Italy's famed Emilia-Romagna region. It is a great venue for small to medium private functions.

The Folco famly also plays a strong role in supporting the local community and industry - volunteering their time and participating in activities held by the ITC and Markham Village. Currently, Mario acts as a Board of Director on the Markham Village BIA and Deana is involved as a committee member in the 2005 Music Festival Committee, organizing the first ever 'Taste of Markham'. Both Mario and Deana have been featured on Roger's cable to demonstrate how to make pasta - while Deana has personally led hands-on pasta making lessons at the LCBO. She aspires to follow in her father's footsteps in becoming a fully-qualified chef - there is no shortage of talent in this family.
